Would it be a mistake to get the m1 over the m2 even though they're the same price now? I know it's older but from what I read it performs better.

For everyday use, I'd definitely opt for the M2. MagSafe. 1080p webcam. "Better" screen. Better resale value.

Are you not aware how optimized OSX is? 8 GB is def enough for non-power users. 256GB is more of an issue but you can always use external storage via Thunderbolt.

Go for it and don't look back. For general use, I doubt anyone will notice the SSD speed difference. Unless you are a heavy user (in which case you may need a higher-specced model), the M2 model will perform better overall. Plus, a newer model will likely have a better resale value.

16GB RAM is really a thing. But it would cost ~$1100 (given that Apple is selling M3 16GB/256GB for $1100 now)

It's really remarkable that Mac has become the value play in a lot of areas. A $650 MacBook Air is more than enough laptop for 99% of people. Mac mini at $500 is a crazy value

So true. M1 air and M2 air look very different too (M2 looks much premium). Not many people knows M2's 256GB SSD sucks.
