Midnight looks pretty good, particularly if you are inclined toward a darker look, with the caveat that it seems to be tough to actually keep clean.
Space Gray is, well, space gray. It's a decent color - my wife's MacBook Air is that color, as well as one of my past iPad's.
Silver is fine. But if you're getting an Apple device and think that space gray is a little boring, Starlight isn't that much brighter or flashy than Silver, but it is a little more distinct.
TLDR: Midnight and Starlight are the best colors, depending on whether you want darker or lighter. Space Gray is 'basic Apple', for better or worse.

I'm coming from a Lenovo x1 carbon gen 11 to a MacBook Pro 14 M3. This is a work laptop π» it's definitely a learning curve trying to adjust how macOS does things. Finder is a POS. I'm missing some productivity apps you can't find on Mac. Apps aren't as freely available on Mac as they are on windows. Mac has a native Linux shell which is nice, but it only comes with zsh so it's not quite useable out of the box. Memory management is much better than Windows, browsing stays snappy. Sound and battery life is superb. If I were to purchase my own laptop I would go with MacBook. I'm done with Windows.
