Woot have the 2021 MacBook Pro 16" M1 Pro refurbished for $735. Eventhough its 4 years old, this is still a very capable laptop. If you need more storage, Amazon renew have the 1TB version for $850.

- M1 Pro is a pretty decent CPU, even today. Not as fast as the M4 base, but you'd be hard-pressed to notice an actual difference unless you're really pushing it to the max for extended durations.
- 16" MBP has absolutely EXCELLENT speakers, mic, and screen.
- 16gb ram/512gb ssd is very low-end for a MBP...but it's acceptable.
The Bad:
- It's a M1 Pro chip -- not the Max. The cores aren't that impressive (just a slight boost over the base M1), and it only supports two external displays.
- The price -- $735 is pretty expensive for what you're getting (see the ugly), when compared to a brand new M4 Air (13" or 15").
The Ugly:
- Woot's "refurbished" is a Spit n' Shine Garage Sale Refurbishment -- usually with more spit than shine. Expect the machine to be beat up...and it's a 5-year old machine. I'm sure it has a great warranty though to offset this risk....
- It has a very poor 90-day warranty. So no peace of mind there. And Woot/Amazon's returns are annoying at best -- speaking from experience. They'll do anything they can to deny a return for a refurbished product by claiming "that's expected from a refurb!" or language of the sort.
There are better "refurbs" out there from ebay sellers -- for roughly $1400 you can get a 16" M1 Max w/ 64gb ram + 1tb/2tb SSD. This is a serious workhorse. And it comes with a ONE YEAR "All States" warranty. Or for much less, you can get similar machines to this spec.
And if you're on a budget, getting a 13"-15" M4 Air is going to outperform all the M1 chips on nearly every benchmark (save for a select few)....but more importantly, it'll be brand new with the option for Applecare.

My experience, I rather buy from Woot/Amazon any day before eBay. Sellers are more shady and return/warranty is crap.Like I said, not for everyone.
Amazon forces you to return their defective, poorly refurbished junk to retail locations. Like Staples or that department store Kolds. Not a prepaid shipping label. So you better hope you have one nearby!
(Many people in the country are in retail deserts, where it could be 45-120+ minutes to the nearest store of a certain type. Nearest UPS store is over 45 minutes away for me, and nearest Kolds is over an hour away. If scAmazon sends me a open-box/used item instead of new, I have up to a two HOUR trip to make during business/working hours....all to fix THEIR mistake.)
(For me, nearest Cost Corporation, Trader Joes, Apple Store, REI, etc... they're over three hours away. And I'm not in the middle of nowhere either....semi-rural area in northeastern USA. "Just bring the laptop into your nearest Apple store for service!" is such a joke. Nearest town is a mere 7-10 minutes away, nearest small city is about 25 minutes away. But the selection of hyper-specific name-brand stores is very limited. Imagine those in the mid-western/mountain states where it's a 4-6+ hr travel to the nearest city.)
FB Marketplace in my area isn't competitive in pricing. You can get better deals somethings here then FB. My area, MacBook Pro M1's are $700-$800 for the 14" and $900-$1000 for the 16"; not great. If there is a MicroCenter near you, you can find better deals.
The MacBook Air 13" M4 base is the best deal for any laptop, A used one can be had for as low as $600 on FB but AAFES was $699 new few months back. I would stay away from any of the Air M1,M2, or M3 with the 8gb RAM.

Wait…what is Kold's…do you mean "Kohl's"? Also, you spelled "Check" as "Cheque"…you must be reaaally close to Canada. Finally, your description of "not the middle of nowhere", is absolutely the very middle of nowhere, probably in the top 3-5% of isolation, so companies are def not going out of their way to make returns easy for you, unfortunately. I used to be in a similar situation in Western Nebraska…pretty much 4-6 hours to anything meaningful
"All States" warranty is a national insurance company that gives very little resistance on these warranties (send it into their designated repair shop, get a quote, and they cut you a cheque), and ebay notoriously decides in favor of the buyer. Never need to worry about shipping, as a prepaid label is printed out.

Odd, I get mail delivered every single day. UPS & Fedex & even gig drivers can find my home with ease. I can call to get pickups anytime I want, and there's a Fedex and UPS dropoff point a mere 8-10 minute drive away....right across the street fro the US Post Office.
So not the middle of nowhere. So why do they need me to take it to a Kolhs or Kolds or KoalaBear or whatever they call that place...when it's an HOUR away. And they give me no option otherwise. That's poor customer service, and a reason not to shop with scAmazon.
