the sn850x deal is 4tb while this is 2tb?

I have both in 4tb and they are very similar for most things. SN 850x has better sustained speeds when writing large files. There are YouTube videos showing this if anyone wants to research.

What's the difference between the pro and the pro with heat sink besides having a heat sink? I want to get one to use with an OWC enclosure for M4 Mac Mini so I can install apps on there.

The pro is strongly recommended to use a heat sink, I think the warranty actually has specific terms for using with or without. So think of it as more of a BYO heat sink.

Personally I'd go with western digital. It seems to have been fixed by now, but there was a widespread problem where some samsung models bricked because of bad firmware.

I literally just got my OWC Express 1M2 USB4 (40Gb/s) in the mail for this exact purpose with my m4 mini. I am no pro, but from my research the heat sink model is not needed, and possibly will not fit properly in external enclosures. I may be wrong, but research your particular enclosure before you buy, it should tell you.

This is funny. I'm looking for an SSD for the same purpose and same enclosure.

Is there a current sn850x deal going on? All search shows is a $500 8tb one. That's too rich for my blood.

There's was an 2tb Amazon "used like new" early this morning for $80, but it sold out quick. I was afraid to pull the trigger. The new 2tb on Amazon for $140 right now

The current price on the WD 2TB is 140 on Amazon so roughly the same as the Samsung. Is the WD better than the Samsung for this purpose?

Yes. That LPN barcode likely indicates that it was returned by someone else. When Amazon sent me a product like that (which was supposed to be new), it ended up just being an empty box.
