I own the Pro 2. The Pro 2 has a removable battery, the Pro 3's is sealed in. If you don't need the extra shoulder buttons that they added (the Pro 2 already has 2 extra buttons in the rear of the grips), get the Pro 2. Yeah, the Pro 3 has magnetic/removable buttons, but you probably won't ever use them (plus they'll fall out if you drop the controller). If you do care about the Nintendo-layout, 8bitdo sells Xbox-layout buttons on their website for a few bucks. I just opened up my Pro 2 and swapped them in.
The Pro 3 vs Pro 2 is like a sidegrade at best, and a slight downgrade at worst (sealed battery). They look almost identical, too.
If one doesn't mind an Xbox button layout (ABXY instead of BAYX), I have the new Gulikit ES PRO, and it does wake both the Switch and Switch 2. It also has TMR joysticks. It's only $30, and in my opinion, far more comfortable than the 8bitdo Pro 2/Pro 3. And if you want to shave off $5, you can get the ES which is the same controller, minus a few features (I think, for example, no gyro, and also it uses Hall Effect instead of TMR, which is not going to be a noticeable difference irl).
