Are you sure it was Instant Pot brand? Best Buy's Insignia pressure cooker came with a non-stick inner pot but almost all IP-branded ones come with stainless steel. I'm not even sure if any come with non-stick. They sell them as accessories. [Cosori and Ninja use ceramic pots]
We bought the Duo Evo Plus exactly five years ago. Using it every day often multiple times a day since then with zero issues. Like so many other things it is possible that cost reduction has reduced the reliability. IDK. However, experience with non evo models makes it easy to recommend paying $30 more for the Pro on sale. It's more than that much better. If you require the savings then $60 for Duo Plus is an excellent deal.
The pot-in-pot method radically improves the functionality. I'm unable to understand the lack of mention. A Pyrex or pyroceramic container works but a 2 L titanium covered backpacking pot is essential IMO. When the steam does not come in direct contact with the food flavor is intensified and texture is greatly improved. Frozen fish and Frozen burritos can't be cooked w/o P-in-P. You will never need to clean the inner pot again.

For anyone who uses this model, what do you make with it and why do you love it? I feel like I need a push to justify getting one. Also, is "Instant Pot" just the brand name or does it actually have special features compared to a regular pressure cooker?
And one last question I've always wondered: can you fill it with oil and use it as a pressure fryer for chicken or wings?

Titanium backpack pots cook amazingly fast. The rate of heat transfer is far greater due to both the properties of Ti and the thin wall of these pots . Food cools down very quickly contributing to freshness and safety. I can tell the difference after rapidly cooling a batch of thighs of legs in ice bath, faster than can be done in stainless or glass, refrigerating and reheating the next day.
You can handle the pot Ti from the rim without burning yourself right out of the I.p.because titanium does not store heat. The square sides and flat bottom allow them to hold more with greater stability. The ultra light weight and rigidity makes them a real pleasure to handle.
