I was thinking freshly smoked brisket on the boat. Trick with something like this is to fill with water that is just off the boil and let it sit for 10 minutes to preheat. Then dump the water, put in your hot payload and you are the hero at your tie up.
Just curious, have you considered a crock pot and battery/ac module like the ones from jackery? they can run a crock on 'warm' for 4-5 hours instead of trying to rely on latent heat.

I used to do the same on my boat and then switched to one of those little induction portable containers like joebob2000 mentioned below. Granted you'd need 2-3 of them to store the same amount, but they will take something hot, keep it relatively warm, and then heat it up to the original temperature in a half hour versus the clock will always be ticking on this guy.
I have two of the previous versions but basically same thing, keeps cold cold and hot hot but insulated always performs better at keeping cold.
use it to hold ice from our portable ice maker when it overflows,
preheat some small stones and put that at the bottom wrapped in a small towel and then put sticky rice (individual wrapped in sandwich bags) on top or tamales and they stay hot all day.
other dumb stuff we did with it is also put hot nacho cheese in it so i can have a bucket of cheese for chips on demand.
