I think your math is off a bit.
I see 610 mg of sodium per serving X 1200 servings = 732 grams of sodium.
732 grams of table salt is equal to 2.5 cups, give or take.

Sodium (Na) is 22.99 g/mol while table salt (NaCl) is 58.44 g/mol, so about 2.54 g NaCl per g Na
732 g Na * 2.54 g NaCl per g Na = 1859 g NaCl
1859 g NaCl / 453 g per lb = 4.1 lb NaCl
4.1 lb NaCl / 7.9 lb bouillon = 52% salt by weight.
