If the main house incoming water shuts off because a sensor detected a leak at the water heater, whatever happens to the heater element after that is the least of the problems and would be fixable, I would think. Especially if the water heater itself leaked, then it - and its element - are going to be replaced. Definitely pales compared to not having the sensor / shutoff system and coming home to a swimming pool in your basement or your house floating away because the leak has run unstopped all the time you were gone........

There is little to no pressure to use hot water in the house when the supply line to the water heater is cut off

Put one in-line and leave the gate valve open and you don't have to replace it unless you want to. I didn't.

If you aren't comfortable soldering, it's pretty simple to install a compression ball valve, depending on how accessible the area is. Sharkbite valves are another option.

Not saying having this isn't good. Just that detecting a hot water valve dripping in one of the bathrooms could destroy your water heater element if the water inlet is shutoff.

Yes but if it drains it will overheat the element. So if the leak is on a hot water valve for instance.

It won't, both the in and out pipes are on top of water heaters. The cold water has a long pipe that lets the cold water flow out at the bottom and pushes the hot water up.
Gravity is not used for the water pressure unless you're flushing the unit.

could it (or you) turn off the hot water heater if a leak is detected?
