It's the perforated lid. It allows you to use searing temps, cuts down the splatter, but most important it allows steam to escape so your burgers don't just steam. I imagine it holds high temps better too, but you're right, it's from Ninja so it's going to be expensive.

I've been looking at this for a while. The large cooking surface and 500° temp are definitely appealing, and I like that the lid lets steam out while reducing splatter. My biggest question is how well the grease drainage works. The non-stick surface isn't ideal since you can't use regular grilling utensils, but if the price drops to around $125, I may give it a try.

I think this one doesn't include the grill plate, only the griddle plate unlike the more expensive version.
