Honest question. I know these griddles have been really popular lately. Is there actually a difference between using a gas griddle and lets say a cast iron pan on the stove? At least with a regular grill you're cooking over fire, you get a bit of smoke and the flames licking the food. That obviously does make a difference. But what does a gas griddle really do?

this just lets you have a flat grill outside and with the surface area, you can cook a lot of things at once like for breakfast or even do smash burgers while camping. the only difference is this is all in one, you just provide a gas canister, if you were to bring a cast iron skillet, you would still need a heating element plus fuel for that skillet. so it comes down to preference, this is by no means a grill because you can't infuse food with smoke. gas grill allows for better heat control compared to using a grill with charcoal.

I think you nailed it. Griddle let's you cook eggs, fajita, etc on a flat top but you want open fire for steaks and everything else.

Instead of a gas griddle I have a Weber Q gas grill and a griddle plate. This way I have everything I need in 1 grill at camp.

Thanks everyone for your replies. I was talking about griddle grills in general, not just this portable one here as there seem to be so many of them now. The combo of grill and griddle actually sounds interesting.

Not every camp site will let you build a fire fit for cooking, and not everyone has the know how to properly set up and maintain a camp fire much less create a proper one for cooking (it just takes one idiot to throw a plastic container into the fire). Plus a gas griddle saves you setup time, can be used anywhere there's a flat surface, is safer to manage, provides predictable and even heat, doesn't require a steady supply of wood, can be put out quickly, and if nothing else can provide another cooking surface so if you have a quality camp fire going, you can use the griddle for stuff like grilled veggies or other items and let the fire focus on the meat.
Also regarding home use, I have an electric griddle that I use for stuff like pancakes, warming tortillas, cooking veggies, etc etc. It's a more efficient cooking surface that pairs well with a nice stainless steel pan. Plus it collects grease which I can easily dispose of.
