On Monday I went to the new homebrew shop/gardening shop. Bought the grains for 10 gallons of Matt's stout recipe for $55 which included a sack of 2 row. Already have the hops from bulk buy and yeast from yeast washing. They also gave me a free beer and I took a tour of their keezer.

Are there any special instructions for storing grains? What is the ideal temperature and humidity? Currently they are conditioning in the car truck.
if you are going to use the grains in a week or two, i ask my homebrew shop or my work to throw it into a 55# 2 row sack that is laying around... dump the grains in, roll the excess bag, then tape it down... its free and works great... if you want to store it for a while, then get the paint buckets.
get them out of your car, too much of a temp swing in a day... just bring it inside the house and that should be fine.

This weekend, we are trying something a little different thanks to Brian's suggestion. We are going to brew Jamil's Evil Twin with a few tweaks. It uses absolutely no bittering hops. All late additions. When we get to 30 minutes left in the 90 minute boil, we are going to load up on Amarillo and Centennial hops. An ounce of each hop at 30, 20, 10, 0. It will end up only at about 40 IBUs. But, it will have a TON of hop flavor and aroma leaving a very distinct malt backbone. Looking forward to it.

This is a must read.

So I wound up with a batch that is pretty over carbonated. Like you lose 1/3 to 1/2 of it in foam when you open one. Is there anything I can do at this point or just make sure to have a really big glass?
