Hey all. Does anyone have any recipies for meatless low fat dinners that are still easy and filling? DF's doc says he's a bit high on cholesterol and that one night a week this should fix it?
Here is a good place to get any kind of recipe you might want, it has a lot of variety. the link I am including has links to healthy eating, tofu and other stuff

http://www.foodnetwork.com/health...2094395244

here are some recipes that might work

Below I have listed five easy-to-prepare meatless meals, that can feed a family of four for $5.00 or under. This is assuming that you are shopping either for store brands or in bulk, at Aldi Foods, or with coupons.

1. Homemade Pizza With Veggies

Dough:
1 ¼ cup warm water
2 Tbsp butter or olive oil
1 pkg active, dry yeast
1 Tbsp sugar
3 cups flour (or a little more, depending on dough texture)

Toppings:
1 can pizza sauce
1-2 packages Mozzarella or other cheese
Olives, peppers, onions (or other desired veggies)

To Make:
Mix flour, sugar, and yeast in a bowl. Mix in oil or butter and warm water. Cover and let rise 30 minutes to 1 hour. Spread on lightly greased large pizza pan.
Cook for 10 minutes at 375 degrees. Remove from oven. Top with sauce, veggies, and cheese. Return to oven and bake for 10-15 minutes. Remove when crust is lightly brown and cheese is melted.

2. Meal-In-One Harvest Casserole

3 medium tomatoes chopped
1 cup cooked and drained frozen or fresh green beans
1 cup corn, cooked and drained
1 medium green or red bell pepper, finely chopped
2 cups shredded cheese
½ cup baking mix (Bisquick or other variety)
1 Tsp salt
½ Tsp garlic powder
1 Tsp parsley
½ Tsp pepper
2/3 Cup milk
3 eggs

To Make:
Heat oven to 350 degrees F. Spread corn, beans, tomatoes and peppers in dish; sprinkle with cheese. Beat remaining ingredients with a mixer until smooth and pour over vegetables and cheese. Bake uncovered in 8-inch square baking dish for 45 to 50 minutes or until casserole is golden brown. Let cool for 10-15 minutes before serving.

3. Pasta and Tomato Sauce Meatless Meal

1 pound pasta of any kind
1 jar tomato sauce
1 container of shredded mozzarella or Romano cheese

To Make
Cook pasta according to instruction. While pasta is cooking, heat up jar of sauce on stove. Drain pasta and serve with sauce. Top with shredded cheese.

4. Meatless Chili Dinner

1 large red or green pepper, chopped
1 onion chopped
2 cloves garlic chopped
1 can green chilies
1 48 oz can stewed tomatoes
1 can condensed tomato soup
1 16 oz. can of pinto beans
1 16 oz can of kidney beans
1 16 oz. bag frozen mixed vegetables
1 8 oz. bag frozen corn
3 tablespoons chili powder
2 packets beef buillion

To Make:
Sauté onions, garlic, pepper, and green chilies in oil. Mix all ingredients together into large crock pot. Bring to boil, then simmer as long as desired until flavors are blended.

5. Crockpot Tortellini or Ravioli Dinner

1 onion and 2 cloves garlic, chopped
One 26 oz. can or jar spaghetti sauce
8 oz. can tomato sauce or paste
1 Tbsp basil
2 (9 oz.) packages refrigerated cheese ravioli or tortellini
2 cups shredded cheese

To Make:
Place onion and garlic, spaghetti sauce, and tomato sauce in bottom of crock pot and stir well. Cover and cook on low all day or until onion is tender. Turn heat to HIGH setting and stir in refrigerated ravioli or tortellini.

Feel free to contact me through the contact form, and let me know your favorite meatless meals. I hope you enjoy these meatless recipes.

What a Monday! The girl at work is still mad...and just wants to have a pitty party! I guess maybe she wants to see me mad...that hasn't happened in a long time!

I get a call at work right away this morning from the dad of one of my daughter's x-friends. (Did I tell you about the friend of hers that stole from her?) Well, he just found out about it and wanted to tell us that he was sorry it happened...DRAMA...

Thanks for all of the tips with DS's friend. I fully understand poverty/child neglect etc since that is part of my world at work...my DH on the other hand didn't even notice the comments or the situation yesterday. I did send him home with a sack of goodies to share with his sisters since they didn't get to stay overnight...just in case!

Kids went back to school today and I think I am going to have some drinks at home tonight!
The mad girl at work needs to grow the heck up. Is she part of the everyone-gets-a-trophy generation or the my-parents-talk-to-my-college-profs/counselors-for-me-so-I-don't-have-to generation? Seriously, part of being an adult is showing up to work on time. Stand your ground on this one. Even if she doesn't get it eventually, her future employers will thank you one day. Big Grin

I seem to gravitate towards less contemporary Christian, I dunno why - I like traditional songs/music in that regard. Maybe just lack of exposure...our radio station does a lot of praise and worship songs like you'd hear in church, but, admittedly I don't listen to that station as much as I should. The kids kind of run the radio and happen to listen to what I always listened to so I suppose, like mother, like daughter. Embarrassment

No, no - I knew you weren't being critical, I just hoped you knew I wasn't criticizing you either. hug Together, we'll get this thing done.

He came up behind me (I was standing in the doorway so I could manage the product tables at the same time, the girls were up front) and started chatting while the openers played. At first, no one knew who I was talking to, I could tell Big Grin Which seemed to be his style. We talked for a song and then he came back and asked me if I had any ibuprofen. Roll He walked away with his very own bottle.

Christianity Today called Jason Gray the "best kept secret in Christian music" and he was a hoot, too. He came up after the concert to the tables and was talking to people and then they all 3 went over to sign autographs for people. The girls got their autographs and a personal thank you for helping them sell merchandise. :no d:

After clean-up we were heading out and Jason was in the hallway talking with one of their people and thanked us again, shook hands with me and high-fived the girls - they talked about it all the way home. LOL

I didn't know gaga was stuck in an egg so I may be farther under the rock than you laugh out loud Here's pitbull [youtube.com].

That does sound suspicious.

You sound like my sister. She spent the whole weekend uploading/ordering and she is not half done I hear. <---Needs a print deal desperately.

Does it look exactly like that or are you just showing us an idea? Where were you when you saw it? (mall, online, resale shop, etc) Sorry you're sick :comf ort:

The wiki needs a little work. *cough* *cough*

:l ol: Lots of knock-knock!

To DH, afternoon-delight IS basketball. I was probably sleeping or watching Team Umizoomi in the other room.

OY, that sounds exactly like me. Which brings us back to my fears about hoarding (that's the first thing they say....they can't find things...)

I hate that you are dieting. The end.
I like Jason Gray too! Sounds like a cool guy and a great experience for you and the girls. (Who are getting so dang grown up, by the way!)

Ugg. This is going to be a relly sucky week! Df is officially done with wiork on Wed, and Hes so stressed out. I was doing fine, until he flipped out last night on spending $5 on a raffle ticket from the neighbor kid. Now im really stressed. I keep track of all the finances, and when i sat down and looked at it it seemed to me we were only going to be $100 short a month (which can be taken from savings for a while) and thats not including any unemployment he gets. But now im starting to worry i forgot something or he knows something I dont (he says no). Saturday wont be here fast enough, I just want to go back to bed.

It was me: )

Yeah at the oscars entrance. If it werent for that egg i wouldnt have known who she was. And i definatly havent heard of pitbull before. I need an under a rock smiley:lo l:
I'm sorry for the sucky week. I'm going to be praying that the transition is smooth for you this week, and that good stuff comes your way soon.

So we had a good anniversary weekend. I'm still a little bummed that we didn't end up getting to go anywhere exciting, but I'll get over it, especially if things work out with the little bean. We were going to go to Las Vegas so I was watching tickets to plan a trip and then once we found out I was pregnant decided maybe I shouldn't fly with my history and also we thought maybe we should save the money for medical bills & when I'm not working. Anyway, we had a relaxing weekend in Omaha instead. Saw a movie, did some shopping and saw some friends that lived there. Our hotel was great - a Marriott I got on name your own prince on Priceline. Yesterday was fabulous weather so we got our garden all cleaned out and ready for planting. It was so nice to spend some time outside with the kids!

Been working on diaper cakes for decorations for a friend's baby shower this coming Sunday. Almost finished, just have to make bows for 4 more of them. Maybe I'll attach a picture..............
I totally get this. But know that Vegas while prego is not nearly as much fun. Wink I just need to tell you that I'm thinking about you all the time and praying for you whenever you pop into my head. :hu g:

We just did a name your price on priceline (first time!) and ended up with a Mariott too. Decided that we're not going to be getting away any time soon since the babe is on the way. My parents are going to take DD for a weekend in April and we're going to sneak off to Portland for the weekend. Not a great tropical spot or anything, but at least a little getaway for us.

Glad you had a good weekend!! : heart:

LOve diaper cakes are adorable!! : hug :

I forgot to mention it here, but J was a sweetheart at the baby shower. He came along (even though it was all women) to help with Sophia. She wanted to go, but I didn't want the challenge of keeping her entertained during it all. Well other kids showed up too (another 4 yo, a 5 yo, and a 19 month old) and he was amazing with all of them! Even fed the 19 month old her snack of yogurt, so that my friend could be a part of the party! :h eart: I need to do something for him to let him know how much I appreciate him!

We are actually having a small break from our biblical proportions of rain! I am shocked, but soo thankful!
Wow, J is awesome! You're a lucky lady.
And yes, what is up with the biblical rain on the west coast. I feel like it rained straight for 2 weeks or more (and no, everyone, it's not aLWAYS like that here). Tomorrow is supposed to be in the upper 50's and I'm ready to break out the capris (well, if I had maternity capris, crap, I need to find some).
Quote from zmmorgan :
Bean is 8 weeks today..........seems like an eternity already because of my nervousness with it all...........I can hardly think of 32 more weeks of this! Of course hopefully after 13 or 14 I will hopefully be a little more at ease. And yes, one will do! I have another appt. on Wednesday afternoon so hopefully things will go well that day and I will be a little less worried about it for a day or two anyway. Thanks for asking!

I am good on diapers but thanks for the offer. Thanks for the compliments!
Wondering about K too...........

Thanks! Glad everyone approves of the diaper cakes, hopefully the mommy to be and guests will like them as well!

Didn't know you were having a shower, how fun! Glad J was a star daddy helping out with the kids! What goodies did you get???? Do tell!!!
The diaper cakes are AWESOME! And yay for 8 weeks!
Quote from ArielA :
Yeah, the shower thing was an akward situation that turned out great! My MIL kept insisting on throwing me one, even though I wasn't sure I wanted one. Then at my SIL shower, she made a big 'to do' about how she was throwing me a shower, so I felt that I had to let her. I thought it was gonna be a damned if you do, damned if you don't kinda situation (my MIL always stresses about these kinda things, so I didn't want to put more stress on her), but it didn't turn out that way at all. She didn't seemed stressed, and I had a great time getting together with some friends and family. :hea rt: I got a lot of clothing! :lo l: And then some of the things off my registry. My step MIL and FIL weren't able to make it, so they came over last night and dropped off their gifts last night. They got us the jumperoo and the temporal thermometer we wanted. heart I am truly feeling blessed lately! I have some pics up on FB from the shower! :no d:
Wow, how cool! People don't do showers around here after baby #1. Well, except you guys, of course. Reason #13282093 why I love my SDSF friends.

got a quick question, I have seen some of you mention freezing coffee creamer, is there anything special you do before sticking it in the freezer?? and is there anything specific you do when you go to thaw it??
I know this has been answered, but I agree with all. It freezes great and thaws after a few days in the fridge. I've also used it frozen for ice in the cooler and then you can use it after it thaws while camping, or whatever.

Hi friends, been missing you guys. I'm doing okay, just starting to feel like a whale out of water. Can't believe I still have just over 10 weeks of this to go. Had a docs appt. today and all is well. The little man is growing on track, and kicking up a storm. I may give birth to a ninja. I'm fully counting down to spring break (1.5 weeks to go). Dh and I have 2 different spring breaks this year, which saves a lot on childcare, but is pretty sucky for family time.

I got a very special gift from some very special ladies here today. Thank you so much for spoiling me and my family. hughearthug

After all that catching up, it's already 10pm here and I haven't got myself ready for tomorrow yet. Sigh, I had a lot more planned to get done on the computer tonight. Oh well, this was the most important thing anyway. Grouphug

I got a great Ida on priceline a number of years ago. DH and I had gotten bumped on a flight so we had free tickets and so we flew to New Orleans (the Christmas before Katrina) for 5 nights. After booking the tickets I looked at motels and even the ones with the bullet holes in the windows were over $100. We couldn't afford that so I was messing around on priceline and ended up at the JW Mariot (top of the Marriot line) for $50 a night!!!! EEK! It was right on Canal we a block from Bourbon street. Great location. It was great. On other sites the room was $369 a night! We had a great time and a nice inexpensive trip.

I was going to put baby stuff on them but I needed at least 8 of them for the table decorations so thought going with ribbon would end up being cheaper since I wouldn't be able to hit Kohls enough times to get enough baby deals for them.

Yeah for the weekend getaway for you & DH! It is always so nice to do something without the kids and I always love them even more when we get back so I think it is a win-win!!! Sucky that you and DH don't have the same spring break this year, but hopefully this little getaway will make it feel like you got to see each other more.

Dh and I have 2 different spring breaks this year, which saves a lot on childcare, but is pretty sucky for family time.
woot Yeah for the healthy little ninja!

I hope Michelle stayed safe last night...there were tornados spotted down in her corner of Iowa. I'm sure that her heart skips a beat in bad weather.

It was Michelle! She put in bedrooms in the basement for this reason.

That is what I thought. I am sure it scares her when tornados are nearby.
Thanks for worrying about me girls! Yes, we put bedrooms downstairs so we could just sleep down there if we are supposed to have storms during the night. That eased my mind a lot. We also now have a weather radio, which we didn't have before the tornado, so that helps because I always know when we are in a warning or watch and don't have to constantly watch the tv to find out what is going on. Although for the first time when it went off yesterday the kids were saying "oh no, it's a storm I'm scared!!!". They have never done that in the past so I hope they don't start freaking every time the radio goes off. I just told them not to worry and that the radio was just telling mommy that there was a thunderstorm and that we should go play downstairs and I would keep them safe. That seemed to work, so hopefully this won't become a problem.

It was the first storm of the season here and we skipped Tornado Watch and went straight to Tornado Warning! EEK! Hopefully this isn't a sign of what else is to come this storm season. Frown The kids and I were happily playing all safe in the basement and luckily there was nothing to speak of happening outside at our house. But, a little south of town there was a tornado spotted although I haven't heard what the damage was. My co-worker got a good picture of it. If I have time I'll see if I can get it from her and post it here.
