Glad you are feeling better. Congrats on the house progress, how exciting! I want to move. I really don't like the house we are renting all that much, the only thing I do like is it is kinda big & has a nice basement for stockpile.

It sucks! I don't know how single moms do it. When DH travels for work he is usually only gone a week or a week and a half and that is hard. This past three weeks was brutal. The kids hate it too, they miss their dad so much and get so restless and cranky. The 2 yr old just doesn't understand and he will be calling daddy... daaaaaaadddyyyy.... looking through the house and getting so mad.

It snowed last night so we woke up to several inches and it has already snowed twice today. shake head Sheesh, can't we get spring yet?

I need to have a yard sale so bad right now.. I want to do one this month cause it will be getting hot by May.. My problem is this.. When I have had them at my house in the past, I just don't get much traffic.. Of course, it has been years since I tried here..

We have a great location at the parking lot beside our church.. But, it is sooo much work to load everything up, set it out, pack it up, etc.. I always feel forced to stay all day after DH working so hard to get it there. If it were here, I could just drag a few things out and get more stock when needed Frown

Thanks for the offer. Yes. I have some qs. They are $1 off 2 13 ounce jars. I keep thinking about trying ONE jar...but then my coupon is for TWO jars.... so then I think I should get two jars and save $1... but then I think "but what if I don't like it?" LOL

I know... the decision to buy Nutella should not be this hard...

nutella is great. i heart nutella. do you like melted chocolate? do you like chocolate with hazelnuts? then you will love nutella. but that being said, don't let your first intro to nutella be the american nutella, please. it's full of hydrogenated oils, artifical flavors etc, and is hyper sugary. doesn't taste anywhere great. the european version (original) and available imported has no hydrogenated oils/trans fats (banned in europe), no artificial flavors and is significantly less sweeter. it tastes intensely chocolatey/hazelnutty. yummmm. it's like the difference between american kit kat ( a hersheys product, and turned into a sugary, fat filled thing) and european kitkat (stronger vanilla flavor, significantly less sweeter with less fat).

there are also authentic/organic nutella versions (not called nutella): it's basically chocolate hazelnut spread (hazelnut butter, chocolate) and some are delicious. amazon has several. trader joes has one too. whole foods has a couple. seek and find.


staples rewards do not roll into themselves but do roll into rebates. whoever didn't get rebates needs to check rebate status online on the staples easy rebates website and then call the rebate center. use of rewards has no impact on it, so don't bring it up on the call. likely there's some phone number/address issue. call em. they're good at helping.

ditch these chemical filled "cooking cream cheeses". i hate gimmicky products that pretend to be food, and are loaded with crap instead. keep the chicken and the veggies and the pasta, and while they're cooking at the same time make your own sauce. takes about 12 minutes for home-made cheesy, yummy white sauce. seriously. make it as thick as you want. and if you have extras, you can use it for some other entree.

like so:

following recipe makes 1 cup:

in a pot warm 1 1/4 milk. if you dip a finger in it, the milk should feel like a warm bath. not tepid. not hot. but like ahhhh, how nice.

while the milk is warming, in a heavy sauce pan over medium heat (or in a thickish stainless steel pan over low heat) melt 2 tbsp unsalted butter.
once butter has melted, add in 2 tbsp flour. mix well, and let it cook till it is gently bubbling and fragrant but do not let it brown. this is called a roux and is the base that will thicken the sauce.
gently pour a little of the warm milk, mix till it becomes a white paste, then add the rest of the milk
whisk the sauce to break up and dissolve all the roux
then on medium heat let the sauce simmer and thicken about 6-8 minutes, stirring periodically to keep a skin from forming

once the sauce is thickened to your liking, if you want a cheese sauce, just add in grated cheese, and mix till it melts. add salt and pepper to taste.
serve over the pasta/chicken/veggies. i recommend leaving the grated/shredded cheese of choice out on the counter before you start cooking pasta or sauce or veggies or chicken, so it warms up. that way it'll melt better when mixed in with the sauce.

done. is so super easy. we pour it onto cooked macaroni, sprinkle some more grated cheese on it and stick it in the oven under the broiler for a few minutes: home made, delicious mac and cheese.
put it on pasta with chicken and broccoli: alfredo!
use it for casseroles, augratins and on and on and on. i made a cabbage and spicy sausage augratin the other day with this sauce. it was soooo good.
and best of all, the sauce is so easy to make. i usually have it on one burner while the rest of the dinner things are cooking on other burners. dinner ready in less than half an hour. if you're using it in a casserole/augratin, you don't need the cheese to melt when mixing, cause it will do so in the heat of the oven. just make sure that when you cook the casserole in the oven that it doesn't boil for long cos then the milk proteins will get overcooked and become granular. but 15-20 min on 375 - no issue. just yummy cheesy sauce.

if i'm making a 9 x 12 pyrex dish of augratin/casserole, where the solids in the dish take up about 1/2 - 2/3rds of the dish, I make 4 cups of sauce.

if you have extra white sauce (without any cheese in it), just mix it with some veggies - like potatos, peas, carrots and green/red peppers, and chill it in the fridge. makes a delicious cold side salad the next day.

GG Popcorn (I think that giving up mobility and a pain free existence is enough to give up for lent this year)

I'm going to get dressed and run into town to do my papers and get that done. Man is it windy today. You know the sound when a big jet flies over low and it's loud? That's what it sounds like (from in the house) -- only it's constant. Hell, maybe this is one time the extra weight will come in handy!
