A Start Set gives you the equipment for the game and 2 TIEs and 1 X-Wing. This does not give enough to actually experience the game but is just a demo. Actual play experience with a full 100 pt squad is very different in a good way.
The game has just transitioned from 1.0 to 2.0. Everything that is 1.0 needs to be converted to 2.0 through conversion kits. These are 1.0 models, so keep that in mind as the jump to 2.0 will require a 2.0 Starter Set + Conversion Kits for EACH faction (the three 1.0 factions (Rebel, Imperial, Scum) have become five 2.0 factions. Most of the 1.0 ships will eventually have updated 2.0 expansions and the production run for 1.0 has ended.

No, you need to buy a starter set, these are version one ships, if you want to play that with version 2 you need to buy a conversation kit

No, they are pieces for a very good tabletop/board game. Some people buy the miniatures to collect/display since they are high quality and very detailed.
