Thanks OP - I picked up the 1100 watt unit. Found that a single 1100 watt unit struggled maintaining water temp within a large cooler last thanksgiving. This year I'm doubling up with 2 units.
For anyone considering Thanksgiving turkey SV, I bought 2 birds last year, smoked one and deboned and sous vided the other. The SV unit won hands down, with breast meat so juicy it didn't seem like turkey, and so soft it could be cut with a fork. Literally. For reference, I cut out the breasts and put each in its own a gallon ziplock for ....a long time(?).... along with a bag for each of the thighs. All were dryrubbed with a variant of herbs de prevance (specifically the simon and garfunkel rub from Amazing Ribs). After cooking, I finished all on a real hot grill for a couple minutes (for color and sear). That grilling was easy, but I may try broiling on a close rack this year to see if I can get some crispy skin.
Anyway, good luck folks, and thanks to the OP for the reminder.
