No, the attack patterns and speed of enemies is much easier to read than any Dark Souls making it by far the simplest (though there is one potentially frustrating part). Coming off of Sekiro (or even the first Dark Souls), every boss in Demons Souls moves like molasses in comparison.
I feel like people easily forget that when it first released, some SNES games were $70. Thats $70 in early 1990s money. We are soooooo lucky that video games cost wayyyyy less than they did 30 years ago when you factor in inflation.
Not all last gen xbox one games support this better graphics and performance you speak of unless they patch it... kinda like what Sony does and usually also FREE.
The biggest plus for Xbox is just the way the games are delivered. Enhanced games for PS5 still share base content with PS4, which can restrict some options for enhancement. The way Xbox delivers games allows for the series consoles to be more distinct.
It makes a bigger difference for some games than others. The recent Cyberpunk video from Digital Foundry goes into this a bit better than I can.
But for things like improved textures and frame rate it's not a direct impact.

Sekiro boss fights were def harder, but the check points were also a lot closer to the bosses. Some of Demon's Souls bosses are so far away from check points and it takes 10-15 min to get there just to die again.

Xbox is smoking them with their seemless updates to new systems for last Gen games. Xbox one game? Sure it can play on Xbox Series… Usually with better graphics and performance… for FREE. No $70 games either.

Just choose the Knight and you will be fine. They have good armor and weapons to start. For beginners once you get used to it things aren't that hard. It plays slower than Dark Souls.
Go for the temple Knight if you want a Halberd to start and more healing.

If I can beat Demon's Souls any of you can. I don't often play these type of games but it was a blast. Some parts CAN be frustrating it took me many runs just to beat Tower Knight boss but turns out he's one of the easier bosses.

I didn't mention sales. I was pointing out that Xbox is doing upgrades and back-compare games right and way more/better than PS5. PS5 is charging a lot to upgrade to new versions of games that you've already bought for PS4… That's dirty.

Not sure which games you are talking about, I got Borderlands 3, Witcher III, and Nioh 2 bc of the free upgrade for the PS5. Witcher hasn't been released yet for remaster but the other ones were awesome.
I agree with your other point about Xbox doing a better job with inter-gen and Gamepass than PS equivalent. Not enough to tip the scales with the exclusives for me but sure wish Sony took note.
How does this compare to Bloodborne? Thats the only Souls type game I've played.
DemS is slower and more deliberate, and it encourages more defensive play than Bloodborne. Types of damage felt more important in DemS, and level design feels less connected than their later games. You can definitely see primitive versions of more complex systems found in the later games.
Overall, I felt DemS was still a great game I would definitely recommend it. I didn't play it much on the PS3, but I have played and beaten DS1 and BB. DemS felt harder at first, but the mid and end game was much easier. I should note, I did not do a magic user run, and I hear that's much easier. I paid 50 for this back in February, and I think it was well worth that price so I would absolutely still recommend this deal.

Bloodborne is actually a slight nod back to DemonS with the way the hub architecture works. Dark Souls was one continuous world where DemonS and BB have a hub to go back to.
That said BB is designed to play faster than the rest. It lets you regain health by attacking.
