Got mine - for anyone running into memory issues, just download 'AMD Ryzen Master' which allows you to essentially have full access to overclocking of the cpu / igpu / memory.
So far I have been running the 5300g at 4.2ghz 1.275v, the igpu at 2000 with 1.005v and the stock memory at 3400mhz and CAS 18 (default was 22! wow). Just started tuning, so this is just the beginning, and you should be able to get the cpu up to 4.4-4.5ghz and the memory shouldn't have a problem getting to 4000mhz with loose timings, but I am trying to find that middle ground.
basically 2400-CL16 or 3200-CL22. I would say it is fairly bad binned default ram, but the board can tweak it fairly well. This guide might help others: https://www.reddit.com/r/Amd/comm..._oc_guide/
I want to connect 4 monitors total: 2 monitors via displayport, 1 via DVI and 1 via HDMI.
The 2 displayport monitor resolutions are both 4K, the DVI is 1440p and the HDMI is 1080p.
What's the best way to do this? It appears there is only 1 displayport connector on my video card.
USB to HDMI/DVI/Displayport connectors don't seem reliable or are close to $100, either way does not seem to be realistic.

Fixed - used 1 Displayport, 1 DVI, 1 HDMI all on video card, and also used 1 HDMI connector from the motherboard. It auto-detected and I was able to configure everything just fine.
4 monitors work well without any extra connectors or adapters.
