How useful are these for a total amateur that wants to do burgers/hot dogs once in a blue moon for a family of 3?
I would probably suggest looking for a gas grill for ease of use. Less clean up and quicker to heat up and use. But if you are into cooking you can do a lot more with one of these

If it's worth the hassle, place another order and return the one you bought earlier.
I tried for Amazon but they're charging $53 for return shipping

I was told you can buy the differences (mainly gasket, vent, and the hinge). I personally will get the gasket and hinge if I need to later. I waited 2 yrs for the II to come down in price and it hasn't yet. I just pull the trigger on this.

JR is more than enough if you don't have a huge family. Unless there is a deal for classic III, I will keep my big Weber gas grill idle there for a while.

I have an Akorn. Would the upgrade to a Kamado Joe be worth it?

The Jr. will most likely be more than enough for a family of 3 and you can just get a Weber for $100 where I got in on the Weber Limited Ed for $100. If you enjoy grilling then I would go bigger and you can't go wrong at $449 for the Classic I.

Seems like the hinge is 200, vent is 60 and gasket is (assuming mesh) 90. So 350 total in upgrades for otherwise the same body, is that correct?

From what I heard. The performance is about the same. Not worth the trouble to upgrade. Just enjoy

In the same boat.

Pro: Better heat regulation from temperature swings

Con: More expensive, need something to elevate the height of the grill, smaller cooking area.

I started with the Akorn (not Jr) back in Spring of 2015 and got more into grilling then bought the BJ II in Nov 2019. From my experience, if you enjoy grilling and have friends and family gathering then getting the Classic I is well worth it especially at this price.
