Why does the 16gb model cost over an extra 200+ for 8gb more of ram? I've been eyeing picking this up but hard to justify the price difference in comparison to the 8gb model. Am I missing something?
Because they can? Why do you think Apple moved to a soc where you can't upgrade ram/SSD yourself. Now you are force to pay $200 for extra 8 GB ram. How do you think they became the first trillion dollar company?

The 16gb RAM model is up to $899 now (with the 256gb SSD), however the 8gb RAM version is on sale for $659 (for anyone that does not prefer the open box options, etc.):
I was close to buying this, but I noticed that, when linking up Lolli rewards, the deal inexplicably went away, and the cost reverted to $899. While I understand that only one referral cash-back service can be used at a time, I was upset that this was not made clear that this is why the sale price did not apply.
In general, I won't buy a non-Chromebook PC with less than 16 GB of RAM. I notice that, for the new Macbooks, the minimum amount of RAM is 16 GB. I hope that the specifications of the next iteration of the Mac Mini follow suit, as I firmly believe that (especially in this day and age), the minimum amount of RAM required for a consumer-grade PC is 16 GB. People multi-task and open multiple tabs, and it is not consumer-friendly to have to manage memory like a hawk.
That is just my 2 cents, but I am hoping that is where the PC industry is headed, as OEM builds tend to charge a lot more for upgrades beyond the base model.

The current m1 version is already so powerful that there is no need for the next gen one with m1 pro & max for 90% of people. Tho If you really don't need the mac mini immediately you could wait to see what other new stuff the next mac mini has and decide from there.
It's probably closer to 12 GB in certain on workload. Apple also added a top notch SSD which helps a lot when you are swapping files from ram from storage and vice versa.
Yes, but it will wear down the SSD faster. How much sooner it will fail is anyones guess

Its integrated memory in the package that has CPU, GPU and Memory as a MCM module, not SODIMM like others do.
And more advanced users are being asked to pay more to fund the next gen design.

Only time i had an issue with 8GB was while rendering with FCPX. You need at least 16 gb to make moderate edits. But for advanced stuff it can surely use 32 GB.
Having said that, if you do programming / coding or general business tasks, this machine will easily serve you well for a long time. If you need a new computer today, this is a great buy.

Non issue with thunderbolt. I have a bunch of 1tb Nvme thunderbolt 3 drives lying around from previous sd deals like the samsung x5
Can we see the price dropping to around $650 within half year? I want to replace my mbp 2014 16GB which is not able to upgrade to the new coming MacOS.
Cheapest way with Apple now is probably replacing the base versions each 24-36 months, after waiting for sales. Assuming you don't compile whole apps frequently or edit lots of video files.
You could get the base mini and a macbook air for like $1350 instead of nearly $2000 recently. Not that many people would need both. You'd could probably get close to all but $600 back if you sold both 3 years later. That's about the same depreciation as a single mid range PC laptop would experience.
