This desktop was the same price last month and I was very close to pulling the trigger. I am stuck between this and the $999 11400f/3060 Newegg deal. I prefer costco for their warranty and customer service, but my use case is video editing and Intel CPU thrives for that due to their dedicated hardware for encoding/decoding h264 video.
I wonder if this is overkill for my usecase because it is just a hobby of mine and I'm sure either one would be a dramatic upgrade from my 8 year old i7 4790 Dell.

As you're comparing specs, I would keep a few things in mind:
1. On a practical level, you're not going to really notice a difference between any relatively current CPUs. I know the nerds have benchmarks, but if you're just doing relatively basic spreadsheets, word processing, and pornhub viewing, it's not going to matter if you have an i9-12900k or a Ryzen 5 3600.
2. The same thing is true with RAM speed. I doubt that 16GB of 3200 mhz is going to feel all that different from 2833 or whatever. Where RAM starts to matter is if you flat out don't have enough, or if you only have one stick.
3. Where this stuff does start to matter a little bit is in gaming, but for the most part, the GPU is going to be the bottleneck there. Once you get to a relatively modern CPU and 16+GB of RAM ( and decent power supply), you're going to get your best bang for any additional bucks out of moving up GPU tiers.

That is $975, has a slightly worse CPU and the same GPU. The most obvious weak points are the RAM (only 8GB) and the SSD. It sounds like your son is interested in PCs, upgrading RAM would be an easy/fun project. You could try to match the existing 8GB for cheap, or go with 2x16GB if you want to splurge a little bit.
Or you can just wait. GPUs are coming back in stock and prices are dropping. I would bet that by around the start of next month, some very decent options (3060 Ti based systems) will be available at $800 to $850.
