A smart home needs 3 things to operate: 1. Smart home products like bulb, plugs, these sensors, etc 2. A physical "hub" that communicates with those products 3. Software that lets you easily communicate with the hub.
Hubitat makes a hub (Elevation) and the software that runs on it. It's a brand. Zooz makes products and the hub and the software. Zooz is also a brand. Smartthings is another brand. Philips Hue. Monoprice. Home Assistant is not exactly a brand, it's software you run yourself on a hub you build yourself. Etc.
Usually a smart home device can communicate with a hub if the communication protocol is the same—the 3 biggies are zigbee, z-wave, and of course, wifi ('matter' is supposed to be another one soon but nothing yet).
A simple start may be to grab a cheap wifi plug or bulb and set it up to start thinking about what you want in your smart home.
