I beg to differ with folks who say the cellular offers no value. It really depends on what you aim to get out of it.

If you will have your phone with you most or all of the time, then yes, save yourself the money and go with the GPS version. But keep in mind that having a cellular model does not force you into using it. You could buy the cellular version and never activate it. You could try it, not like it, and turn it off. Whatever you want. There have been steep discounts on cellular models over the years, and you shouldn't hesitate to buy one if the price is more in line with the GPS version. Because again, you don't have to use it.

For me, it is worth it. When I go for runs, I don't take my phone. If something were to happen to me, I could easily make a call to get help. I treat it like an insurance policy. And even though I don't use it often, it's worth it to me to have that functionality.
Cellular capability allows the Watch to call 911 in case of an emergency even without a cellular plan.

Never had a smart watch…. What does cellular do for me if I always have my phone with me? Or, besides swimming, running, rock climbing, I'm not thinking of a situation I would frequently not have my iphone with me. TIA

Will it pair with or work with my airpods without iphone nearby? Music, call, etc?

+1

Cellular watches are also great for younger kids so parents can track location, reach out as needed without having to give them a distraction driving phone. Also, helps you stay away from mindless screen scrolling sitting in a car or while outdoors, you have everything you need on your wrist.

No way I'd get a Series 7 with Series 8 right around the corner.
