Good deal yes, although this feels like the new list price, or at least 'goes on sale for this price often' until they end production.

The next series is Ryzen 7000, but it is a new platform, so new mobo and DDR5, "Fall 2022". For an upgrade to an AM4 platform, Ryzen 5000 is the end of the line.

No, what's significant about 5600G is it only supports PCIe 3.0 compared to 5600 and 5600X where both support PCIe 4.0.

It depends on what you're looking for, but the 5600G's performance is on par with Zen 2, not Zen 3. The 5600 (and 5600X) is significantly faster, and I would argue that this is a far more relevant factor than the PCIe generation.

PCIe 3.0 vs 4.0 can be important in certain cases; e.g. paired with a discrete GPU that is limited to x4 PCIe lanes (RX 6500 XT). But this processor doesn't makes much sense to pair with any discrete GPU, since its value is primarily derived from its relatively beefy iGPU performance. Furthermore, anyone who truly needs PCIe 4.0 SSD performance is not going to be opting for the 5600G. The SSD would cost more than the CPU itself.
