Still rocking the 2017 APT4K. Anything groundbreaking with these newer version? Still have no issues with UI/UX. Will I get a big enough bump on picture quality?

You misunderstood why I shared that thread. The "entire" thread is what I was sharing, not specifically the OP's post. There's good discussions as you go down it even though it is a Nvidia fanboy club.
Everyone knows that the current Shield's hardware/UI etc. are dated and a little laggy, but it's still the best Android player on the market, and one of the top devices (if not the top if you put Kodi into play) for replacing an actual HTPC. You're not using these devices to gawk at your collection, you're using it for media playback which is what the Shield ticks the most boxes for. 4K HDR (check), Atmos and other high definition audio (check), Netflix app with 4K support (check)... YouTube HDR (womp) but that's really the only thing it can't playback.
Unfortunately because of the age of the current version, I struggle to recommend it anymore but I won't discount the fact that the hardware, from a media playback perspective, is still superior to just about all the other options.
Does appletv support Dolby Atmos via plex yet? It didn't used to, and the shield does, hence I have two shields.
Probably adding this AppleTV in order to add airplay to my tv. I use android so I can mirror to my Sony, but my family can't (they went to the dark side) . The appletv solves this problem
What do you guys do to compensate for the lack of the "skip / play next" button?
I've searched all over and there is no solution which is really odd. Apple purposely seems to have disabled this button for all its apps as the Android/XBOX/etc versions all have the button to skip to the next episode.

Actually you can. Anyway your whole point was that there is no discount on this because it was released weeks ago. I pointed out that the airpods pro 2 were released weeks ago too but those have a nice discount and those got a real upgrade compared to the previous version.

I figured but I didn't want to assume the worst, its an apples to oranges comparison; "why would I buy anything released more than 5 weeks ago at less than 20% when they had airpod pro 2 for 20% off" is illogical
I got this at Bestbuy when I first came out for 129.99 with discount code. This not a deal buddy. 5 dollars off is nothing.
"This" as in the 3rd Gen 128GB w/ Ethernet or the 3rd Gen 64GB WiFi only, or worst, the 2nd Gen? If anything than this, that was definitely not a deal buddy.

Can't comment on 2017 model but I have a 2021 4k model and the base storage model for this gen doesnt have ethernet.. so there's that. Need to go up in storage for ethernet.
