In 1967, back when gas cost $0.33/gallon, you could get a free steak knife on every fill-up. Think I'm still using those ones.

Funny, I filled up a day ago and paid almost $100. No free steak knife. Things sure have changed.

These have some of the fakest reviews I've seen on Amazon.

That said, I've seen this brand before at Costco and they were alright. I'm going to chance these as guest steak knives as I only have nice steak knives for my wife and I at home right now.

Hopefully they keep an edge well and can be honed/sharpened easily.

They should keep edge pretty well.

According to the Cangshan site, edge retention on Sandvik 14c28n is 5 times better than German steel.

"Handcrafted, full-tang blades are forged from fine-grained Swedish Sandvik® 14C28N steel, which holds an edge up to five times longer than German steel.
Each blade goes through our proprietary ULTRA6 heat treatment, ensuring strength and function.
Blades are hand sharpened to a 16-degree angle per side.
HRC 59 +/- 2 on the Rockwell Hardness Scale."

Not sure about Amazon reviews but the set I got last week was amazing. I got the chef and paring knife set with the TAI block and the sharpness is even better than my L1 steak knives. The smooth-edge L1's cut steak better than my serrated WMF steak knives.

14c28n is on the lower end of the various super steels - I'm sure these are fine. This steel isn't that special or expensive.

Yes, but for most people, it is already overkill.

I believe 14c28n is ranked the same as VG10, which is my favorite knife steel. No need to get any fancier.

I have an M390 knife but can't tell the difference vs VG10. Then again, I'm not a knife pro so there's that.

14C28N is amazing steel if properly heat treated. It offers corrosion resistance and optimal carbide formation. People often misunderstand steels and think all that matters is edge retention - not true at all. Steel in knives needs corrosion resistance, edge retention, toughness (resistance to deformation), and the ability to be sharpened easily. 14C28N is a low carbide steel that is similar to that used on razor blades. It resists chipping very well and can be easily sharpened. It holds a wonderful edge and can take a very thin edge bevel unlike high carbide steels which require fatter edges to prevent chipping.

Great stuff, especially in the kitchen.

Congrats. I was eyeing that set but since I already have a full block set I love (L1 12-pc) I opted to just get the 4 steak knives and the 3 knife gift sets.

I gave my TAI block set to my uncle as it fits him better.

I should've gotten that A series block set too. Oh wells...too many good knives.
