Solid entry level XC bike and a good value.
Pros: hydraulic brakes, internal cable routing, wide range 1x Deore drivetrain with 10-46t cassette, tapered headtube for future fork upgrade, etc.
Cons: heavy coil fork, 10-141 QR rear hub, XC geo (some will complain about the steep headtube angle)

You're definitely right that qr has been phased out (for marginal gains for most), just lamenting the days of simple universal standards.
There is no doubt that the through bolt design is stronger, but I doubt that most riders have ever had a problem with qr.

Salsa or Canyon Grand Canyon 5 ?

However, I'm not used to seeing a 141mm rear hub....old school mountain hubs that I'm used to seeing are 135mm for QR. I wonder if these are actually boost hub shells with end cap adaptors to make them compatible for frames that requires QRs?

The $599 Grand Canyon 5 is last years model and only available in L or XL, so if you're under 6ft it'll be too big. Grand Canyon 5 has a better drivetrain but less travel fork, and has a straight steerer head tube which really limits fork upgrades. If you plan on riding less challenging trails & want something you don't plan on modifying, the GC5 will be the better bet. But if you plan on dabbling into some more technical trails and plan on doing future upgrades, the Salsa would have my vote.
