I didn't have a "chugga, chugga" guitar... and now I do.

This guitar is stained, not painted. It just looks flat black in the pictures, but in person you can feel the pores in the wood and see the grain.
The neck is roasted as well as the fingerboard.
Jackson is a Fender brand, but for the same price, their quality control is a lot better than Squier.
In person this will look and feel like a much more expensive guitar!

Pickups are the same generic super high output humbuckers Jackson uses in all their cheap guitars, which means they've got a lot of gain, but the bridge sounds muddy if you play clean.

Pickups can be swapped as easy as any other guitar...they're standard size humbuckers.
Maybe some pros and cons of each, or different use cases?

The Jackson is a higher-end guitar for the price and IMO will play better. Reasons: The Les Paul Specials don't have a contoured body. They're just a big slab of wood, so they're less comfortable to play than Dinkys, which have both a belly cut and a arm contour. The Jackson has a roasted neck, which is a higher-end feature. The Jackson balances better. The Epi will have some neck dive because the front strap button is farther back.
Things that might be better or worse for you:
The Jackson has a vibrato (universally misnamed a "tremolo" because Leo Fender got confused), the Epiphone doesn't. This means the Epiphone will be easier to keep in tune unless you deck the trem on the Jackson, which requires some work (either stronger springs or lighter strings). But then you don't get a trem.
Low-end Epiphones have a slightly shorter scale (24.75 - "Gibson scale") which is a bit easier to play if you have small hands. Jacksons have a slightly longer scale (25.5 - "Fender scale"), which is better if you want to tune down. They both have thin necks.
The Jackson has that nice oil finish, but that Epi has the flamed sunburst.
If you get a Les Paul Special, DO NOT get the Special 1 with the wraparound bridge. The individual strings are not adjustable and you will never get it intonated right without a new bridge. The Special II has the Tune-O-Matic bridge where each string is adjustable.
