I moved from a pair of 24" to a single 27" plus laptop and that alone was a huge improvement in my work. Dual 27 would be amazing. IMHO much better than ultrawide because they're more expendable if they fail, plus if you do a lot of screen sharing with people, it's easier to make one screen the "share" and the other "private"

Would two of these be good for a work set up? Mostly email, word processing, spreadsheets, etc. I'm using two old 22" and need a bit bigger. No gaming at all.

Absolutely. 27" is probably the max size for FHD resolution before you start seeing pixels. For office work, pair of these would work real nice granted that you have enough space on your desk. Another option is to mount one of the monitors vertically and dedicate it for document viewing. You'd need to buy a separate VESA mount though as the included base doesn't allow vertical rotation.

Most operating systems have a blue light filter function these days that works just as well in reducing the amount of blue light emitted by the screen.

I've been working remotely FT since 2011 and been using eye care monitors for years - both Asus and BenQ. If you spend 2+ hrs in front of a computer monitor daily, do yourself a favor and take ergonomics and eye health seriously. I think BenQ has better eye health tech, but Asus is better quality and value for $$ overall. So much of that varies by model though. If you're on a budget this post is a great option.

And regarding the notes around OS blue light filters - it's true that OS have blue light filters built in, but it's not the same. Check out the 'Night Light' filter on Windows 11 for instance - that's an example of a blue light filter. But it washes everything out in yellow, and not something I'd want to use during the day. If you do it at the hardware level, you can alleviate that effect.

That's just one factor that goes into eye health though, and the way the OS handles blue light vs hardware approach aren't quite the same. I wouldn't want to use 'Night Light' mode in Windows during the day.

Just curious, what's your take on flat vs. curved for eye health? About to upgrade my monitors and decided to focus on eye health as a factor in my decision making.
