Listing is for a 13-inch wok, but Babish doesn't make a 13-inch wok (14-inch only), so either the title is just wrong or it's an incorrectly listed item. Either way, half price for a well-rated wok.

Item description says this is actually a 12" wok so it is a little on the small side, ideally you want a 14" wok
Woks are made for high temperature cooking and flames. Traditionally woks always had round bottoms -- flat ones being made to appeal to western kitchens.

Using a wok, high heat is concentrated in the bottom center, and with the round bottom it's possible to use a smaller amount oil to cook food very fast. Wok is very thin and conducts heat very quickly but does not retain heat. You get almost instant control of the cooking temperature just by turning the flame up or down. Cast iron skillet is the opposite to Wok in terms of temperature control. Stainless steel multiply pans are kind of in-between.

You actually don't need to heat up the sides. The essential of wok cooking is "wok qi" or "breath of wok" which is the high temp to archive maillard effect. Because the wok can't be nonstick, the most difficult part is mastering the "hot wok cold oil" technic.

If you can't get wok hei, you are either crowding the wok too much, not pre heating enough, or disturbing the food too much. Some stoves have higher/lower BTU than others so adjust your cooking time and technique to fit your situation. That's probably not emphasized enough in all the cooking shows. Experiment a bit, change things up sometimes.

Walmart's Mainstays wok, at $6.88 is slicker. It's carbon steel. Only drawback is the non-stick coating.

A proper carbon steel wok should be bare metal color with a layer of machine oil for rust protection. if a wok has a black coating out of the factory, it is a bad news for seasoning. You won't be able to completely burn off the black coating and seasoning won't stick well to the surface. Don't buy a wok with non-stick or stick-resistent coating.
