SS is stronger than Aluminium and does not scratch as easily.
The Aluminium models have glass, SS models have Sapphire Crystal display. Both looks and durability improve for SS.
You can just to go to an Apple strore and hold it to feel the difference.
And 8 mostly the same just 9 is brighter. I turned off always on screen and my battery lasts two full days with this. The only problem this is old Amazon stock and the battery burned out from being on the shelf so long had to send it to Apple for warranty replacement. But it's amazing if you don't need the 9 brighter screen

In terms of the link you provided though, that's a renewed/refurbished watch which I personally was trying to avoid. If you're ok with refurbished, then there are actually cheaper options for stainless steel as well.
