I absolutely love the car. As absurd and silly as this sounds, it's far more Cayenne than RAV-4. My only complaint is that gas mileage is mediocre to poor.

I agree no car can do "over 300 hp of torque"
Torque, which is measured in Newton metres (Nm), or pound feet (lb-ft), is the rotating force of the engine while horsepower is the rate at which that force works...."horsepower of torque" is a gibberish phrase.
But if you want something much quicker than anything Mazda makes and gets the mpg equivalent of far more than 40mpg there's a number of EVs that'll fit the bill.

The Versa is rated 32 city and 40mpg highway, the Accent 33 city/41 mpg highway, the Rio 32/41, and the Mirage 35/41 for the sedan and 36/43 for the hatch.
So none will deliver 40 MPG in exactly 50/50 mixed driving though the Mirage hatch comes rounding-error close... but if you're mostly highway driving you can maybe get there with any of the 4.
That said if your budget is that tight a new car might not be the best idea regardless.
