Certainly a 16" MBP is going to be cooler than a 14", simply by virtue of the increased chassis area to circulate and expel air. Commensurately, a 14" will throttle before a 16" does--but I've never read anything that suggests that translates into legitimate "problems" with heat. Every laptop eventually throttles. It's part of the spec.

A quick question … would you prefer this ($1750) over an open box 16 inch M2 16 GB RAM / 512 GB from Microcenter (for $1611)?
The only thing that should have won that over is if the M2 Pro was 1TB. The biggest bottleneck in a machine in this price point is 512GB for something this expensive
Obviously, warranty is important. Personally, if it's M2 w/ warranty vs. M1 cheaper but no warranty, I would go M2.
I've been doing the open box hunt at Best Buy lately. Their standards have gone down -- TWO of the so-called "excellent" open box macbooks had either a deep gash or a dent. Definitely make sure you check it out.
The issue with the former is that I was not able to get warranty and Apple care from Apple as according to them the MC refurbished doesn't qualify for their warranty.
My hope with the M2 from MC is that I will be able to get the Apple warranty (as apparently it's a new open box, not a refurbished one).
Moreover, it's M2 (12 core CPU and 19 core GPU) as compared to the M1 (12 and 16 cores respectively), slightly more powerful.

The 14" has no heating issues; don't suggest otherwise unless you have specific evidence and you're an owner.
I haven't, even after a good 2+ years of ownership of a 14" M1 Pro, even as a very tech-oriented person who uses Docker & local LLM AI, with XCode and lots of other pretty heavy applications installed, all of which are notorious for sucking up a lot of space. I still hover around 200GB free on my 512GB.
