Can this game be played on quick breaks at work or does it require hours to gain traction?
Depends on how short/long your breaks are. In general the save game system works by reaching camp fires where you can save progress. Even on foot they are quick to get to.
There are some story elements where you have to let the cutscene play out. Usually game is saved automatically right before but there is no indication of that.
Other than that you will get into fights with more difficult opponents. Depending on your level and understanding of how to fight them you may run out of break time. Most of the time this should not be a problem though, as long as you remember about camp fires.
For me the problem was that frequently when I knew I needed to stop I wanted to keep going, to dispatch of another herd of machines, sometimes just to sightsee.
Assume that if you are following the main story you will need more time because of cut scenes. Side quests can usually be handled quickly.
Just paid $12 to Gog yesterday. Im assuming this is a steam key? Kind of wish I waited a day but i played it all night last night and I am hooked. Crank those graphics ups because the game looks amazing.

This is incorrect. CDPR owns GOG not cdkeys. Cdkeys is a gray market seller no official keys are purchased from publishers directly. Im not saying cdkeys is bad but I am saying they have no affiliation with CDPR.
