None of these products will protect you from phishing.
I guess I'm nervous about windows defender. Will it remove scripts from downloaded files? Does it verify downloaded Exe files are virus free? Does it monitor for sketchy web addresses that a site might launch?
These are all things that I see Norton doing all the time. I have kids and a wife that may not be the savviest web surfers out there...

It is possible to remove your credit card info - I do this all the time for Norton.. and Norton will still work.. but as you say if you leave the credit card info in there Norton can and will quietly try to bill you for some obscene amount.
Norton will ask you to create a Norton account then demand your credit card info to make the product work.. that's fine go ahead and do that.. then when Norton is up and running go back into your account, turn off auto renew and remove your credit card info from the account right after turning off auto renew.
Be careful turning off auto renew you'll have to answer several prompts where Norton makes it REAL easy to click the wrong one saying " Yes I'll keep auto renew" (they're sneaky and highlight it in yellow to catch your sub-conscious attention for one thing ) .. so watch those prompts very carefully.
None of these products will protect you from phishing.

I did it to mine last night. It looks like you're cancelling but in reality you're cancelling auto renewal. I went through with it and it still shows my 6/30 subscription end date.
I did have to pause my process and do a Google search to make sure though before I just went for it.

Why wait? I turn off the auto renewal right after I activate the subscription.
I think because when you go to shut it off they make it sound like you're cancelling your subscription so I decided to wait in case they did. I have since learned they don't it's just their purposely confusing wording
2 years ago I bought this on a super cheap deal. After the 1 year anniversary, I had no idea auto renew was on until I randomly saw a charge for $100! I caved and just went well it's done. Fast fwd to today and I know my subscription ends in a couple months so I went on this morning actually I turned just the renewal piece off. You can turn that off at any time so you won't get auto charged.

Some things in mind:
I just put a reminder in my calendar a few days before renewal. Do the same for other streaming services too as well as for when things like Prime renewal occurs or other random bills that I won't remember in a few months time.
