The engine in AYCE is a major improvement over the first two games, especially on the Switch.
None of them are perfect, but to say AYCE is worse is just categorically false.
Doesn't matter if the engine is better if they don't fix lagging. You'll think you click on a plate only to click on something next to it. You'll be blown or pushed around only to find you're on the other side of the small map now.
This games requires precision and the lag ruins All You Can Eat. Playing couch Coop might be fine, but playing with someone else is terrible to this day.

Are you playing on Switch with cross play enabled?
If so, make sure your MTU is set to 1500. The Switch defaults to 1472, which is not ideal for most connections and not how the other consoles are configured.

It a known problem across all platforms since the game came out and people should be aware of it. You don't need to pretend it's an only my issue.
Played the whole thing on my PS5 through PS+ Extra with my girlfriend online with no issues and the game ran perfectly... On the switch I can imagine it was rougher.
