I heavily overpronate, have flat feet, heavily heel strike, and have tried a lot of different running shoes. When I first started running with the GT 2000, the pain and discomfort I had always experienced running went away. When I added Kayano 29, there was no discomfort and I felt (and continue to feel) great afterwards. I heard the Kayano 30/31 is a little different in some ways to the 29, so I can't speak to that one. But, to your original question, the GT 2000 and Kayano are both stability shoes and I think they're really similar. The Kayano is my favorite running shoe, followed by the GT 2000, then Mizuno Wave Inspire 17, and then everything else.
Side note: everybody's different, and I think it's worth going to a running store in person to get properly fitted and evaluated, even if you just do it once. I had been running with the wrong size shoe and wrong type of shoe (for me) for years.
Anyway, not sure what you're coming from previously, but if you're deciding between the GT 2000 and the Kayano, it's probably worth picking these GT 2000s up for $55 and giving them a go.

There is currently a similar deal directly from ASICS on the GT2000 and they definitely have shoes and I've bought from them before.

They sent me a letter saying that there is no size 8.5, but there is one! I'm very dissatisfied with the service, support doesn't help.. and also, the coupon doesn't work!!!
