Everything I read about this stuff is promising to those of us trying to cut down on sugar, aspartame, sucralose, and sugar alcohol sweeteners. The texture is different from regular granulated sugar, it's much more fine, but it acts like sugar. You can cook and bake with it. It's not natural, but it is made from sugar. Unfortunately, although it's considered safe by the FDA, it's not approved for sale in Europe. Not exactly encouraging, but there's no bad info on it...yet.

What I like is that it tastes like sugar and doesn't have any appreciable aftertaste. The health benefits are almost too good to be true. It doesn't raise blood sugar and doesn't promote tooth decay. You do have to use a little more compared to regular sugar because it's not as sweet, only 70% sweet as sugar, but that's OK. The taste is good as far as I'm concerned and this is a good price.
Allulose is great. This brand is not. It says "powder" but comes in coarse chunks. There were several contaminants in my bag. One appeared to be a piece of plastic, but not the same plastic as the bag it was in. Another was black and unidentifiable.
Worth noting Xylitol is extremely toxic to pets. So I try not to keep anything like it in the house in case they uncharacteristically counter-surf, or get some scraps. I just don't risk having things in the house that tempting when there are other solutions like allulose that exist. And the other info from eyestrain but something I hadn't already seen noted.

Apparently allulose is best for frozen items like ice cream.

We tried this on some Christmas baked items. The instructions says use 1 1/3 cup for every cup of sugar the recipe calls for. Try that ratio first, but we had to bump it up to 1 1/2 cup for every sugar cup to get the correct sweetness level. Other than that, good stuff. I'm not sure why some of the reviewers are getting larger crystal forms of this, ours was a powder.

Why dont you get Xylitol? It is sweet and healthy too. Little expensive but I enjoy it.

You can get 5lb Xylitol of the same company for $23.

In the case of allulose, it is promoted as a natural sweetener because it is found in nature in jackfruit, dried fruits, maple syrup, and molasses. However, to be produced in a cost effective way, allulose is not isolated from those sources. Most commercially available allulose is synthetically made from corn.

Got this last month on my S&S for the same price. Can agree that it's a bit chunky and you either have to sift out the big chunks or try to break them down.

Sugar alcohols like xylitol and erythritol might be a little unsafe. Cleveland Clinic: https://newsroom.clevelandclinic....and-stroke

Allulose isn't a sugar alcohol and so far looks pretty safe, though some experts are skeptical of all low calorie sweeteners.

I think allulose blends well with sucralose and stevia. Sucralose might affect the gut microbiome but I'm willing to risk it.

Thanks for the article. I searched a lot about Xylitol before but never found anyone mentioning side effects of it.

I read an article from Harvard and it says its safe. Its crazy how these studies cancel out each others. https://www.health.harvard.edu/nu...substitute

Yeah. That's what I didn't like about it. It's good for baking but not for dry use unless you have something to grind it up with.
