I usually just do mine for 2 hours if I have the time, and then sear it for a couple minutes on my Weber gas grill. Or you can also sear it on a cast iron.
But I guess if you're doing low quality cuts, might need to cook it longer so it is more tender.

Haha. I built this exact thing, with a blue cooler. Used a hole saw to cut a perfect hole. Then sanded it down slightly for smoothness. Works well to prevent heat loss. Prior to Covid, when I was working in an office, I would do an ice bath and cook it on the way home from work (I have the OG wifi/bluetooth model). I mostly WFH now, so I can just cook it whenever.

Appreciate the detailed response. Sounds like a much better alternative to reverse searing (low temp in oven with a meat thermometer, and then quick sear both sides.)
The only issue is my wife has been going nuts about health stuff and would not want to boil food in plastic. Already tossed out my awesome Ovo non-stick pans and anything teflon coated. Won't even let me put plastics in dishwasher.
