These don't have any buttons and require the App to use. It's free, but it's a little annoying to have to pull out my phone every time I use it. That said, I use mine at least 2-3 times per week. Mine has worked flawlessly since I got it about 6 months ago. I've definitely gotten my $20 out of it.

Nothing really to be said that hasnt been said before in the numerous times this gets posted (exclusively by staff). No physical controls, app control is free (for now). No guarantee that will persist.

That's not steaks, that's roast beef, 165F is way too much heat especially for that cook time. Restaurants will usually keep their steaks at 120-130F so they can slap it on a searing grill, pull it just after it gets marks for rare and in under 1 minute for medium rare. The general answer for home users is 3-4 hours @129-135F for a ribeye or strip, once you've reached a four hour cook time at those temps it's starting to really break down connective tissue, keep going and it shreds rather than having a tender but still steak-like chew.

Good cut steak, do NOT cook it for 8 hours or whatever mentioned above. I believe ideal is 1-2 hours. After 2 hours, the fibers in the meat start breaking down. Google it, as there are plenty of suggestions out there.

I usually just do mine for 2 hours if I have the time, and then sear it for a couple minutes on my Weber gas grill. Or you can also sear it on a cast iron.

But I guess if you're doing low quality cuts, might need to cook it longer so it is more tender.

Good guide here: Sous Vide Steak Guide | The Food Lab [seriouseats.com]
I agree. I've never done longer than 2 hours for filets, but read often of people doing meat for hours and hours (or even overnight). Common sense tells me that the longer you slow cook it, the more tender it gets as the connective tissues break down, but I also think there is such a thing as TOO LONG where it just becomes overcooked. But my steaks are so perfect at 2 hours that I've not been motivated to try longer!

I always start with very warm water to expedite getting to my desired temp and I use a plastic container and put foil over the top. Just can't bring myself to spend $40+ on a container w/lid.
If you're doing a longer/hotter cook, cut a hole in the top of a can cooler. Only $15.

If what you're cooking isn't that big, you can just use a pot, especially with the smaller ones like in this deal

Haha. I built this exact thing, with a blue cooler. Used a hole saw to cut a perfect hole. Then sanded it down slightly for smoothness. Works well to prevent heat loss. Prior to Covid, when I was working in an office, I would do an ice bath and cook it on the way home from work (I have the OG wifi/bluetooth model). I mostly WFH now, so I can just cook it whenever.

I'll have to take a picture to share.

Didn't imagine these sous vide cookers could get this affordable. I remember when they first became popular they were all over $100

Appreciate the detailed response. Sounds like a much better alternative to reverse searing (low temp in oven with a meat thermometer, and then quick sear both sides.)

The only issue is my wife has been going nuts about health stuff and would not want to boil food in plastic. Already tossed out my awesome Ovo non-stick pans and anything teflon coated. Won't even let me put plastics in dishwasher.
You're not boiling anything. For medium-rare steaks or lamb chops I set the temp around 122 (making minor adjustments depending on thickness) for 2-3 hrs. Afterward, throw it in a warm pan and sear each side with a propane torch (maillard reaction for flavor) and it's done.

Searing after sous vide does not, for me, raise the internal temp enough to change the doneness. For filet mignon, I do 133F for medium rare and it's very pinkish-red inside after searing. 120F would still be undercooked (and possibly dangerous as bacteria isn't killed until 130F).
It's to prevent an overcooked band from forming near the surface if you like uniform doneness throughout, which is where sous vide excels

Risk it? Plenty of comments here are very positive and almost 80% of the ratings on Amazon are 4-5 stars. Do you tend to just read the doom-and-gloom reviews from people with no clue how to use it? Your loss. If you've never done sous vide, THIS is your opportunity to try it and be amazed.

Question for the experts -- when I was at my local market where I get my meat, they had a "Denver steak" which looked like a Wagyu New York. HEAVY marbling. Would this cook properly at the lower temps of a sous vide or is this fat-centric type of steak meant for high temps on the grill?

Thanks for the info. Seems good unless they start charging for the app.

What on earth does a sous vide cooker do? Seems odd food needs to be in a baggie to be cooked. Is this a glorified water boiler? Why would I want this over just turning on the stove?I don't care enough to google this so feel free not to respond.
You could have just googled "what's the difference between sous vide and boiling?" Instead of making yourself look like a dingus in a comment section 👍
