Holy crap is this show amazing and the last episode just shocked the hell out of me.

Whereas Walt is reactive, Gus is proactive. Gus plans ahead, knows that he can use Jesse if he has the right kind of instincts... so he arranges for the fake stick up situation, and allows Jesse to not only 'be a hero', but also prove his instincts are fit for a life of crime. These instincts were on display in Mexico when he took control of the situation in the meth lab. Gus also knows that Jesse can cook Walt's formula... but will he try to turn Jesse against Walt? Or is Walt taking care of that for Gus?

it's not like south american drug dealers are uneducated when it comes to car bombs, and if he does know about the poisoning, then he knows walt made it, and with that knowledge and the knowledge of his chemists background (obviously) he could guess walt could make an explosive.
also don't forget, he probably knows all about their use of thermite to steal the methlamyne (i think) from the warehouse before. as he always says he thoroughly investigates those he does business with.
Why did Gus leave the car unattended? why not have the driver drop him off and met by the other guy waiting in the hospital? Gus is too smart yet doesn't do other smart preventive things? That kinda struck me as weird to have a guard but yet leave the car unattended.

Gus knew to walk away from the volvo b/c he realized that the kid was poisoned by Walt... and that it was a trap. They both use Jesse, but apparently Walt is even more Machiavellian. What a great show.
