let your intuition be your guide. be proactive and start looking. better that you be in control of the situation than wait around for the axe to fall.
deep fried? i heard it's delish but very dangerous.
The recipe is simple and not precise (as with all filipino cooking there isn't a measured recipe)
You can use your choice of meat ground pork or ground beef, I always use beef, it just is tastier in my opinion.
Usually we use 3-5lbs meat (we make a lot)
Then u can dice or food process the veggies: carrots, celery, and onions and cilantro (is the secret lol)
I also put 3 or 4 cloves of garlic, u can run it till very fine in the food processor or u can used the already minced kind in the jar.
Put it all in a big bowl and mix all ingredients together (like making a meat loaf)
Season with pepper NO SALT! And kikkoman soy sauce, basically we measure how much soy sauce by eye site. But usually u only want enough to barely change color of the meat from red to have a little brown color to it. I usually just add little by little mixing in between until I see its evenly colored.
And that's it for the mixture, now just use your favorite wrappers and roll them, they make two sizes, are family like the smaller ones. We just cut the square wrapper diagonally.
I can't tell u exactly how many lumpia u will get out of one batch, I think its about 100-150 maybe? I've never actually counted
we do freeze them but I don't like how they come out after being fried, because the wrappers become soggy, I prefer them fried as soon as there rolled.
Eat with sweet and sour sauce or a new family favorite homemade
Guacamole.

As for my job situation, I'm gonna ride it out. I was thinking of maybe going back to school, -m not sure yet what I want to do?
Just to give u a little background I have always been a stay at home mom, still am, but I now also work full time from home, for a year and a half now. I wouldn't have gotten this job if it wasn't for the fact that I can stay home with my kids while I work. DH is very traditional, he does not want our kids to ever be in daycare, and so far they never have been. Ds is gonna be five in nov. And next year will go to kindergarten. Dh and I also own a business but do to the economy it has not thrived as we hoped. We have been lucky to have a few dedicated clients that continue to call in work, but its not guaranteed. DH said if worse comes to worse he will work for another company. So I guess only time will tell! I'm not going to quit my job this could be an oppurtunity to advance, if the company does survive.

My mom used to make many many dozens around Thanksgiving time and would take some to our Thanksgiving dinner and would freeze the rest. Those things were sooo good and I am definitely going to have to get her recipe and continue making them (I'm a small fraction Filipino)

Thanks SO much for Kohl's Qs Kallison. You sent me a perfect number too! I was thinking last night I would only be able to spend 5 or so

At Publix, we have these peelie type ones that you can enter online. If you have 8 you get 50 pts. and 12 you get 100 pts. Can someone who is knowledgeable please tell me, do I enter these and print out something to give the teacher or do I send them to her to enter? Also, can she/ I do more than one set? (say I have 24, can she do it 2 times?)
I think its through click call mail.
Thank you all in advance for helping this poor soul out!
