Ok, so after the wife cooks and is mopping up the kitchen, I help out and wash dishes but can someone please share the secret of how to cook scrambled eggs without leaving the pans in such a mess? (no butter)

u cant, cause eggs=protein, it will stick. what you need is the following:
LITTLE bit of butter or other fat, HOT skillet

key is to cook eggs for as short as period as possible while making sure they are cookedSmilie

now, get in the kitchen and fix me a sandwich

What's key, Rammy, is the pan. It doesn't matter how cheap the pan is so long as the only thing you cook in it is eggs so it doesn't get all scratched up. A light coating of pam spray or a tsp of oil should keep the eggs from sticking. If you don't have a pan dedicated to eggs, try pouring 1/4 cup of water over the eggs as they're frying and then cover to let steam until cooked to your liking. Too, if you have a cast iron skillet to cook your eggs, make sure it's hot, then add your oil then eggs.

We've got decent pans, I think, "Calphalon One" but I may have been sold over by the marketing hype. I haven't let the pans get too hot on our gas stove cause they hold heat really well and burn the hell out of anything on "high". I try not to use butter, but Pam isn't working Frown
