My easy chicken cacciatore recipe with onion, green pepper, stewed tomatoes, wine (optional) and oregano
INGREDIENTS:
1 cup chopped onion
1 cup chopped green bell pepper
2 medium cloves garlic minced
3 tablespoons olive oil
2 cans (14.5 ounces each) stewed tomatoes
2 teaspoons dry oregano
2 teaspoons salt
1/2 teaspoon pepper, or to taste
4-6 chicken breasts cut up to bite size
3/4 cup dry red wine
PREPARATION:
Heat olive oil over medium heat in a large skillet.
Brown chicken on all sides.
Remove chicken and drain off excess grease, leaving a tablespoon or two.
Add chopped onion, green pepper, and minced garlic to hot skillet; sautuntil onion is tender.
Stir in tomatoes, wine, oregano, salt, pepper.
Add chicken back to sauce and bring to a boil.
Reduce heat, cover, and simmer for about 20 minutes.
Serve with hot cooked wheat spaghetti or any other pasta you like.
It should serve about 6 or 4 very hungry people LOL
If you like it on the spicey side, you can substitute the
2 cans (14.5 ounces each) stewed tomatoes for
1 jar of Classico Spicey Tomato & Pesto pasta sauce and omitting the wine.

Omlets In A Bag
Ingredients:
One or Two or three Eggs
precooked Bacon pieces (canned, bottled, or from a previous meal)
ham (sliced lunch meat, cubed, or other)
precooked sausage pieces
shredded Cheese
onion - diced or minced
green or mixed peppers
salt
pepper
other seasonings
diced fresh tomatoes
sliced fresh mushrooms
other toppings you might like
Method:
In a sandwhich sized Ziploc bag, pour in one or two or three eggs (no shell!).
Add shredded cheese, bacon, onion, whatever you like and seal the bag removing as much air as possible.
Squish the ingredients to mix (milk or water not needed - use sparingly if you do).
"Burp" the air out.
Recommend that you double bag. Slips with names or pieces of packaging can be put in between the bags so you can tell whos is whos. Everyone can make their own - exactly as they like. This gives everyone something to do too.
Gently Drop in a pot of boiling water.
Boil 3 min-1 egg, 4 min. for 2 eggs. 5-6 minutes for 3 eggs.
"test" the baggie - the more toppings you add you may need more time. You can not over-cook them (generally) and they will not brown/burn unless the pot boils dry.
Open bag & roll omelet onto plate. YUM!.
You can top with more shredded cheese or toppings and serve.
Little clean up (if any).
Perfect fluffy omlets without over-cooking every time. It's the only way I make omlets now. At home or camping - very easy and it involves everyone. You can make/cook lots of them all at the same time too.
Taco Tot Casserole
1lb lean ground beef
1 - 1.25oz pkg taco seasoning mix (or more to taste)
minced onion if desired added to meat
1 - 15oz whole kernel corn, drained
1 - 11oz can nacho cheese soup, undiluted (or chedder or southwestern or other soup)
frozen tater tots (regular size, mini size, or popcorn potato)
shredded cheese (sharp cheddar, monteray peper jack, mexican blend, taco, or other(s))
salsa (opt)
sour cream (opt)
Preheat oven to 375.
In a skillet cook beef until brown. Drain. Stir in taco seasoning mix and add water, cook as directed on package of taco seasoning. Spoon meat mixture into an un-greased 2-quart casserole dish. Spread soup mixture undiluted over meant. Spread drained corn over beef. Spoon undiluted soup, if using two soups, over corn. Spinkle shredded cheese over top. Arrange tater tots in a single layer over this.
Bake for 40-50 minutes or until bubbly and potatoes are lightly browned. If desired, serve with salsa and sour cream.
Yield: 5-6 servings.
We like to mix up the soups and cheeses and often do. Onion flavored tater tots work great, the smaller ones are better than the larger.
Tonight I made it with McCains popcorn potato and it was great.
My 32" feels like it weighs a ton.
