These were my burning questions when I bought this:
- Are they louder than previous AP?
Yes. If I had to put a percent on it I'd say about 20% louder.
- Is the noise cancelation a gimmick?
No. You can blow dry your hair and you will barely hear blow dryer while listening to music.
The only downside I've come across is finicky connection with my iPhone 8. It doesn't automatically connect when I put it in my ear sometimes. Very irritating when I have an important call.
This is a total luxury purchase if you already own last gen AP, IMO. But if you're in market for your first pair I'd buy these 100%.

I don't have an iPhone. Will I run into any issues because of that?
I believe it doesn't auto pause/play when taking it off and putting it on. Also no spatial audio (that is only available on Disney+ and AppleTv+ apps at the moment though). It may not connect as fast (but should still be plenty fast), you can't change between the 3 modes (ANC,off, transparency) on the phone, but you can change between ANC and transparency with the stem (don't think you can put it in the off mode which just doesn't have ANC or transparency).
I was sadly underwhelmed with the AirPod Pro's noise canceling: Working from home during the pandemic I wanted to mask noises around me in house with kids, dogs, etc. My Bose do an amazing job with ANC, but the call quality is poor compared to Apple. Is there anything else that might work better ?
1. The battery life doesn't last long. If you're lucky enough to have the battery in one or both sides die within the one-year warranty, the repair or replacement is free. Outside the warranty, if you purchase Applecare+ though, you have to shell out $29 PER EARPIECE for repair or replacement. So if both sides die, that's $58! And tax may be charged, depending on where you are.
2. They tend to slip out of your ears from time to time without warning. Even switching to the largest earbuds in the package, they still slip out. It's not the fit, but the design of the Pros. The regular Airpods do not have this issue.
I bought mine from Costco and returned them because they keep slipping out. I suggest you buy from Costco because you can return them anytime. They are not under the 90-day electronics return policy because they are considered accessories, according to a Costco rep.
There is definitely huge concern for it being fake.
Currently, fake ones look, feel exactly the same as real ones, including box, packaging and shrink wraping. Chip inside fake ones can pair with iPhone and appear to be AirPod except it doesn't have noise cancellation and provides extremely poor audio quality.
Not worth the risk saving a few bucks buying anywhere other than Apple Store.

Over ear headphones are always going to be better at blocking noise. Plus ANC is intended to block low pitch, constant frequencies like the sound of an airplane engine. Not voices.
