If I were to move to AIMesh, what would be two other solid models (but less expensive) that would work well with this? I probably need two, possibly three, total units to cover 3800 sq ft.

If you can get the old TMobile TM-1900s they are the same thing, you just have to go through some steps to remove the TMobile crap and then just flash a normal AC68u firmware on it

I run an AC86 as my router and have a hardline to downstairs where I have an AC68u as the Mesh Node

For easy reference https://www.asuswrt-merlin.net/ - All of the models listed (that aren't in the no longer supported list) have AiMesh
