I'm not buying, but I would assume wait for that spilled liquid to cool down or use a towel? or use a lid or taller pan/pot? or a touchscreen glove? You know, things you would normally do with a regular stove (i.e., use a mit if the pot is hot; don't overfill your pan, kettle; etc.).
I have a single burner induction with touch controls... Not a single problem. Only the surface below where the pot was ever gets hot and that's just because the pot itself conducts heat, not from a flame or heating element.

Spills are no problem. Never too hot to wipe up right at that moment.

I use my portable induction all the time, even with the option of my gas burners at the helm. It boils water very quickly... But more importantly, it doesn't heat up the whole kitchen. This is a huge deal when cooking soups for hours on a hot summer day.
You honestly believe that a few drops of water take 15-20 minutes to cool down from boiling on an induction cooktop?

only 1500 and if one sides goes out you have a half broken unit

Reviews said you can get max both up to power level 9 (out of 11) on both sides at the same time. I think that's doable since I rarely go max except to boil pasta or do a sear.

You also need an induction-compatible pot, pan, etc. I assume?

Really? We're going to put the touchscreen controls on the same surface as the cooktop? Even if the response is "it doesnt get hot there", what prevents hot liquids from spilling out onto the controls?

Better to have 2 separate 1800 w cooktops or this 1500w combo?

I would go with the two 1800 watt units but you have to be careful to make sure they are on separate circuits. Two 1800 watt units on high will likely trigger most 15 amp and possibly 20 amp breakers depending on what else is currently drawing on that circuit. If you can figure out what outlets are aware in terms of your circuits and breakers you can put them on separate circuits though and likely be just fine. There's also the fact that more power to one burner is better than half the power to two burners when what you really need is all the energy possible into a single pot which is often the case. There's also the basic fact that redundancy is built in with that solution and if one craps out you still have a backup.

15 amp max is 1800 watts
20 amp max is 2400 watts

That is if on the West Coast. But if you live in the East, they can hardly keep voltage at 110VAC.
