The chromebook won't die on the AUE date, and your apps in Linux and Android would continue to take updates, however the ChromeOS and integral browser do stop receiving updates. As the risks associated with ChromeOS are relatively low thus far (i.e. -sandboxing works), creating a path to maintain browser updates past the AUE date really makes the basic Chromebook experience an potentially evergreen one.

Obviously they're from the future reporting back that it wasn't extended any further.
You could use Google docs and sheets if the school allows.
Apparently the android version previously had good chromebook support but they removed it.
You could also also use the linux version of libreoffice through crostini if you need offline support though; that should be fine for basic school use.

Chrome OS won't allow you to use MS Office software. You will be able to use the online version of MS Office and this computer should be fine for that. Keep in mind that using the online version of MS Office isn't as seamless as using the locally installed version of Office. Not sure how familiar you are with what I'm saying, but if your experience of using Office with another computer is simply clicking on a Word doc file on your computer and it opening inside the Word software, it's not going to be like that.
Online Office is also more limited unless you have the subscription and even then I'm not sure if it has all the features of a locally installed version. Honestly, I doubt that will be a problem for most people, especially if you are using Word primarily. It will be an issue for specific things like advanced formatting options and advanced functions of Excel (macros, table config, etc.). I doubt you will be dealing with that stuff for school.
I believe Chrome OS is set up so that you can easily access Google Docs or Sheets and those are comparable to MS Office. I'm not sure if you can click on a local document or Excel file and it will automatically open it within the browser inside Google Docs or Sheets, but I think it does allow that.
Just keep in mind you can't really download programs on a Chromebook. Think of it as a computer that is almost entirely centered on using the Chrome browser and the "apps" that you can download for that. It's a lightweight OS that works well on lower end hardware like this, but your ability to do things outside of the Chrome browser will be limited.
I have to say the surface 3 laptop I got recently is considerably slower than the acer spin 713. And the fan is way louder.
I just wish chromeos wasn't so limited.
If you only need to work on your own documents you can always use Google docs. Google docs is able to open and save Microsoft word and excel files. However, if you specifically need word and excel to share files with teammates and things like that, like the live editing features, you'd have to use the online version like someone else mentioned.
