Darn, okay. I don't have water or an oven so I was hoping I could just jam the sous vide cooker directly into a dead chicken's cavity and cook it that way. Guess I'll have to keep shipping around.
Cons to SD pointless comments like this^

This is a specialized cooking device used for specific cooking outcomes. It's target audience is foodies and chefs. The whole point of this device is so you can cook food at a lower temperature and maintain good safety.

I usually use a large pot for sous vide, and I pre-heat the water on the stove, so the lower Wattage is not an issue. Once it gets to temp, it has no problem maintaining the set temperature, so you do not really need more than 800W for that. When it is just stirring, it uses less than 20 Watts, and thenwhen the heater kicks in, it will jump to a higher Wattage for a few seconds to keep the temperature (it shouldn't fluctuate more than a degree or so, anyhow).

Higher Wattage models will allow you to reach the desired temp more quickly, by a ratio of the Wattage (1000W units will get there about 25% faster).

I have this model and there were two issues that have come up over about 5+ years. One is that I seal the top of the pot with aluminum foil and sometimes the unit will just quit. I suspect it has to do with moisture condensing inside the unit and tripping some type of sensor. I then have to dry it out with a fan or hair dryer to get it working again. The other is that sometimes the stirrer will make a loud screeching sound for a while and then stop. I have to turn off and on the unit until it stops.

I ended up spending $10 more for the upgraded V2 1100 watt model. Mixed reviews but hoping the extra power and upgrade will be better.

I've got the 1100w model, but it's every bit as good as my (dead) Anova. I think 800w would be fine, just take a little longer to come up to temperature.

If you've not done Sous Vide before, just make sure you have the right expectations. This won't save you time or much effort, but you can easily make perfectly cooked steaks, you can make tough cuts of meat tender, and you can be flexible about cooking times as long as you don't expect it to be quick.

E.g. I can throw in some chicken breasts in a zip-lock when I get home from work and even though they might be done after 45 minutes, no harm in leaving them in for several hours until I'm ready to serve dinner. They do need to be quickly seared in a pan if you don't want them looking odd.

I use this at least once a week. The hot water that comes out of my tap is right around 140F, so I don't have any issues bringing cold water up to temperature. Even then, 800W is plenty of power since it directly goes into the water.

Sous vide is the best kitchen appliance I've invested in since the Instant Pot. After using my original Anova for almost 7 years, I've come to realize that even generic branded clones work just as well. Just as well those Instant Pot clones do.

In 4 1.

My Anova nano is starting to act up so this is going to be a backup.

In for one. I have the Anova Precision Oven. I have tried the Sous Vide mode but it didn't work as well as a stick model like this for steak. I have had steak a few times using a stick Sous Vide like this. I was going buy an expensive Anova but this Monoprice appears to be just fine to try out.

The longer I sous vide, the more I appreciate the device being disconnected from Wifi and Bluetooth. I've never had a need to start or stop my device remotely, and it only seems to cause issues with cooks.

I have this very unit. For all of my needs, the 800W unit is perfect for Sous Vide cooking. Some great books and online resources to learn the process.

This is a good resource to get started:

They provide lots of resources on their site for cooking time and temperature for all types of food. One critical issue with meat is not allowing cooking times longer than 2 hours when cooking below about 131F. While sous vide allows lower cooking temperatures over a longer period in order to cook food evenly and to an optimum result, there are minimu and maximum times to allow for pasteurization of food at lower temperatures and to not allow botulism or other micro-organisms to grow at temps close to about 130F.

There were a few complaints about the bottom of the 1100w version coming apart, have you seen any indication of that happening with yours yet?

I was interested in it until I read about that (and the accompanying +20 degree changes losing those parts makes to your temp range.)

I have this exact model for the past 2+ years. I looked specifically for a model that did not have bluetooth or wifi, and all the controls on the unit itself, as some BT/Wifi units force you to use their app.
An additional benefit of this particular model is that the metal shield around the heating element / impeller is removable so you can clean it easily.
Tempted to buy another one just as a gift or spare as the price is great.

800watts can easily hold temperature in ~10 quart water with 4 thick steaks in it.

Debating 1100w vs 800, only 10 bucks difference. Any personal experience between the 2. Also note can save 5% on either through target woth red card if you have it.

We've had this same model for 3 years and never had any issues. Use it once a month. Super simple and cooks evenly. This is a great price I paid $8 more during a Black Friday deal.
