Intel Core I5 12600K 10 Core Proc (6 P + 4E) w/ Intel UHD Graphics. Decent price if you are looking to build a new machine for what is IMO the best processor for the 12th gen. 13th gen is around the corner so prices will likely fall in coming months but this is almost always the case for technology?

This isn't a huge discount, but about the best price its ever been unless you're really quick or lucky. This chip is already a fantastic value at normal price, plenty for a midrange or even high end gaming system.

Comparing the Core i5-12600K (6P/4E) to the Core i5-12600 (6P) it appears that the difference in performance can be attributed almost entirely to the difference in clock speeds. With that, the K version is a lot more power hungry so I'm really not sure what the point of the E cores is. Personally I'd prefer not to pay for them on my home machines.

If you need one now, then sure. But Raptor Lake (13th gen) is coming out on the 20th so if you can wait, do so to see the prices at that time for both 12th and 13th.

Yes, it is fair to decide whether the 4E cores and the price increase are useful for your workload. For regular gaming workload it only offers limited improvements over 12600. However, if you are looking at compilation, rendering, video encoding/decoding it is a substantial improvement. For my use case, it is actually a worthwhile improvement for the extra cost. Do your research and map them to your needs - but calling it a 6 core processor or even claiming it is a lot more power hungry are both factually incorrect statements without additional context.

Intel Ark says ECC Memory is supported, but is it true only for DDR5 or DDR4 too?

It is supported but you would need to find a W680 chipset motherboard which are way expensive not to mention the price of ECC RAM itself. I think at that point AMD might be more cost effective for your needs.
